Stone Fruit & Massaged Kale Salad
  • 1 bunch kale, stems removed, washed and dried thoroughly
  • 2 tablespoons extra virgin olive oil
  • Juice of 1/2 lemon
  • 2 teaspoons honey
  • Salt and pepper to taste
  • 2 pieces of stone fruit of choice (try peaches, nectarines, or pluots)
  1. Chop or tear kale into bite-sized pieces, and place in a large salad bowl.
  2. Drizzle on lemon juice and enough olive oil to lightly coat, and sprinkle with salt and pepper.
  3. Massage kale for 2–3 minutes until leaves have softened, then allow to marinate for at least 15 minutes.
  4. While kale sits, slice stone fruit into wedges.
  5. After marinating, taste kale and add more olive oil, salt, and pepper as needed. Add stone fruit, and serve!
